The red bean, called Dark Red Kidney, has a bright red color and has a floury consistency. The peel is rich in proteins and starches, while in the pulp we find fibers, minerals suche as iron, calcium, phosphorus and B vitamins. These beans are easily digested, low in fat and contain isoflavones, substances that can maintain good health our immune system, the brain and the bones. These legumes also help the formation of enzymes useful for the liver and have purifying and diuretic properties.
Their taste is sweet, similar to that of chestnuts and sweet potatoes. They are very used for the preparation of tex-mex dishes. They are perfect for soups, but not only: recipes with red beans range from cold salads to side dishes with rice and cereals, from vegetables balls to the preparation of desserts and jams.
Before cooking, they should be soaked for at least 12 hours in water, after which they should be cooked for about 2 hours.
