Chickpea flour. Chickpea flour is an alternative of wheat flour especially in gluten-free recipes. It is obtained by milling dried seeds of chickpea. It represents the main ingredient in different Italian regional recipes, like Liguria’s farinata and Sicily’s panelle. You can mix it with durum wheat flour in home-made fresh pasta, batter and in gnocchi.
